Double Bean Cups

We love beans.
We love things in cups.
So, I created a double bean cup!
Just bake it in the oven for about 10 minutes and voila!
Bean cup magnificence!

Double Bean Cups:

6 medium flour tortillas
1 can vegetarian refried beans ( I use vegetarian because there's no lard in it) 
1 can black beans, drained and rinsed
shredded cheddar cheese
sour cream
romaine lettuce
salsa

Preheat oven to 425 degrees.
Warm the tortillas in the microwave for about 15 seconds to make them pliable.
Lightly coat 6 jumbo muffin cups or a popover pan (I used a popover pan!) with cooking spray.
Fold and press the flour tortillas into the cups.
Do this slowly and make sure you make a nice opening for the beans to sit in.

                                   

Remove the vegetarian refried beans from the can and place in a large Ziploc bag.
Snip off an end of a corner and pipe the beans into the cups.


Spoon some of the black beans over the refried beans. 


Top that with some shredded cheddar.


Bake at 425 degrees until cheese is melted and tortillas are light golden and crisp, about 7-10 minutes.


The cups should remove easily from the pan.
Pop them onto a plate and top each cup with lettuce, sour cream, black olives if you got 'em, and salsa. 
Fun, easy, and delicious!
